There are three main tea growing regions in Sri Lanka.These are, Low grown teas which are teas grown on an elevation between sea level to 600m,Mid Grown teas which are from 600m to 1200m and High grown teas which are grown at an elevation above 1200m.The taste ,flavour  and aroma of teas from each elevation are influenced  by the conditions particular to those regions. Low grown  teas ,which are subjected to long period of sunshine ,dry and somewhat warm and moist conditions, exhibit a burgundy brown liquor and a malt ,heavy note with black leaf appearance. Whereas High grown teas grown on an elevation of around 3000 feet would be dramatically different – depending on the time of year influenced by the chill winds ,dry and cool conditions these teas are likely to be extraordinary light, with greenish ,grassy tones in honey golden liquors.

Roasting Types


Vanilla fragrans is important source of natural vanilla.It is used as a flavor ingredient in the confectionary and also in perfume and pharmaceutical industry. Vanilla is an economically important crop as it is the source of natural vanillin. It is believed that vanilla is indigenous to north eastern Mexico. It is ancient Totonaco Indians of Mexico who were the first keepers of the secrets of vanilla. When they were defeated by the Aztecs they were demanded to relinquish their exotic fruit, vanilla pods. Later Aztecs were defeated by the Spanish and Spaniard Hernando Cortez, the Spanish mariner, returned to Spain with the precious plunder vanilla beans which were combined with cacao to make an unusual and pleasing drink. For eighty years this special beverage was only enjoyed by the nobility and the very rich. Then in 1602 Hugh Morgan, Apothecary to Queen Elizabeth I, suggested that vanilla could be used as a flavoring all by it self and versatility of the exotic bean was finally uncovered. However only in 1858 Gobley was able to isolate vanillin from vanilla pods. Today vanilla is grown by Madagaskar, Indonesia, Mexico, Thahiti and few other countries including Sri Lanka as a commercial crop.

Cinnamon Leaf oil is extracted by steam distillation from the leaves and twigs of Cinnamon tree (Cinnamomum zeylanicum). It has warm, spicy aroma.Colour range dark yellow to orange. Major ingredient is Eugenol. Ceylon cinnamon leaf oil has significantly less Coumarin than Cassia cinnamon . It has anti bacterial and antifungal effects. This is often use as neutralize odours while creating a pleasant exotic scent.


Black Pepper is a food seasoning that is made by grinding the dried berries of an Indian plant along with their hard, black covers. The dried black berries of the pepper, harvested while still unripe and used either whole or ground as a spice and condiment.

Cardamom is a spice native to Sri Lanka. It is called the “Seeds of Paradise” the pods can be used whole or the husks can be removed and the seeds released. They have a very aromatic taste. They come in green and white varieties.

Cardamom is the only spice that can be used with sweet and savory dishes or to flavor rice.


In the culinary arts, cloves are a spice made from the flower buds of an evergreen tree called the clove tree.Clove flower buds are harvested, unopened, and then dried. Cloves have a very strong, pungent flavor and aroma. They can be used whole or ground.

Nutmeg (also known as pala in Indonesia) is one of the twospices – the other being mace – derived from several species of tree in the genus Myristica. The most important commercial species is Myristica fragrans, an evergreen tree indigenous to the Banda Islands in the Moluccas (or Spice Islands) of Indonesia.

Sri Lankan Nutmeg is the dried seed of an evergreen tree. This spice is used in making curry powder and some sweet dishes and cakes.



Dried or fresh Lemon Grass is commonly used to make herbal teas and other drinks. When cooking with Lemon Grass you can use fresh, dried or powdered leave and pseudo stem. Lemon Grass powder obtained after grinding dried Lemon grass (Cymbopogon citratus)

Cymbopogon nadus (“Heen pangiri”) and Cymbopogon winterianus (“Maha pangiri”) are the two important species grown in Sri Lanka. Heen pagiri plant is native to Sri Lanka.

Citronella oil extracted from leaves and other aerial parts of the plant is the commercial product of importance. Water or steam distillation is the main methods of extracting citronella oil commercially. Citronella oil is used as a fragrant in cosmetic industry, soap and detergent manufacturing, polish, paint and in insecticide industry. It is a common mosquito repellent and also used in indigenous medicine as well as in flavoring food and alcoholic drinks in certain countries.

Quality of lemon grass oil is guided from the citral content and from the solubility in alcohol. Water distillation method is used to obtain oil
